THE VINEYARD
Sourced from two distinguished Adelaide Hills vineyards.

Echunga Vineyard: Just 700 kg picked from 20-year-old vines grown at an elevation of 390m on limestone, shale, and quartz on an alluvial loam to medium clay.

Macclesfield Vineyard: One tonne picked from 23-year-old vines grown at an elevation of 330m on fine sandy loam with incorporated ironstone overlying a clay loam.

WINEMAKING

Yields were very low in 2019 but quality was high for Chardonnay . Both vineyards were picked in early March, at just the right maturity level. The Echunga fruit retained its acidity well which balanced the slightly more fruit driven block in Macclesfied. Both vineyards were hand-picked, cold pressed, wild yeast fermented at cool temperature on full solids in Burgundy coopered barriques and kept separate until blending. A small portion of hyper-oxidised full solids ferment pressings were used in the final blend to add some texture and mouthfeel. Matured in barrel for 7 months with frequent lees stirring prior to blending and bottling. Contains minimal sulphites.

"Light yellow, youthful colour, with a restrained bouquet of tropical fruits, lemon essence and almond shavings. Iced pastries, too. The wine is crisp and tangy, fresh and light-bodied, lean and the finish is medium-length. Very good, and it promises to improve further with a little more age. (Grown at Echunga at 390 metres altitude. Wild fermented on full solids in seasoned French barrels. 85 cases made)."

"Fresh and lively, but with flavour. Melon, white peach, a little spice and almond meal. Some flint to the texture, cool acidity, but with an appealing softness and ease of drinking built in. Finish is good, a little lemon zest closing it out. Very easy to like".
