WINEMAKING

The Fiano was cold soaked on its skins for 24 hours prior pressing. The juice was hyper-oxidised to soften phenolics prior fermentation in matured French Barriques. The Semillon was fermented long, cold and clean to retain freshness.
Contains minimal sulphites.

"60% Semillon and 40% Fiano. Interesting blend.
Lime, chamomile, raw almond, saline. Good skinsy tannin and crunch to the texture, brine and ripe citrus, apple as well, juicy, yet also pleasantly bitter, and again the distinct salinity in the aftertaste. Wax and grip. Distinctly Italianate in feel, and also very enjoyable with it. A huge bowl of mussels would be ideal."
