Shiraz sourced from single vineyards in Clarendon and Tatachilla in McLaren Vale and a single site in Macclesfield, in the Adelaide Hills. The blend of vineyards captures the uniqueness of Shiraz grown in cool and warm climates.
Cold Soaked, de-stemmed but not crushed, around 5% whole bunch. 14 to 22 days on skins, fermented in headed down open fermenters. Pressed into 5-10 year old
seasoned French Barriques and matured for 10 months prior to bottling. Contains minimal sulphites.
